Mirabelle

Summer 2006

Guy Reuge still remembers the day he became a chef.

He even remembers the date: June 24, 1966. His first job in French cooking - other than helping his mother with the traditional Sunday roast and tarts - was to clean the pastry trays at a little bistro near Orléans in the Loire Valley.

As an apprentice, Guy wore a blue apron and a chef's hat that stood no higher than a surgeon's cap.

Those tall French hats - you have to earn them.

In his 40 years in the business, Guy Reuge certainly has earned his tall hat. Ever since he and his wife Maria moved out of New York to Long Island's North Shore and founded Mirabelle, Guy's colleagues in the Master Chefs of France have called him the “most highly prized chef to the east of New York.”

And now they're going one better. On Sunday, June 25 - 40 years almost to the day after Guy first walked into a professional kitchen -- they're giving him Le Toque d'Argent, or “The Silver Toque.”

Lutece's André Surmain created the award in 1961 as a way for the Master Chefs to recognize one of their own for life-time achievement. Luminaries like André Soltner, Daniel Boulud, Jacques Pépin, and Christian Delouvrier have received the Silver Toque.

It's a triumph not only for Guy, but for Long Island cuisine. And it's the perfect opportunity for lovers of fine food throughout the region to raise a glass to a man who has been exploring new ways to delight our palates for 23 years.

In addition to the June 25 event at Le Cirque, here's another that might interest you, especially if you like the Long Island angle.

Just four days after receiving The Silver Toque - on Thursday, June 29 -- Guy will be additionally honored at a dinner that Taittinger Champagne is throwing in his honor at Mirabelle. The French Consul of New York, M. François Delattre, will bestow upon Guy the medal of “Le Merite Agricole,” another mark of distinction in French cuisine, and Guy will present Le Toque d'Argent to a room that's packed with grateful customers.

Interested? If so, please give me a call. I'll be glad to put you in touch with Guy, get you a photo, or handle any other mechanics. Thanks.
